Gourmet Camping Recipe: Spice-Rubbed Pork Tenderloin

Gourmet Camping Spice-Rubbed Pork Tenderloin is flavor-fully seasoned and juicy.  I have made this on a Large grill as well as a small charcoal grill like a “Hibachi Grill”…I think the small charcoal grill was the best…it gave it a very smoky, rich flavor.  If you don’t plan on bringing a grill of any type on your camping trip…try wrapping this in foil once you have seasoned it, and cook it over a grate over your fire pit (not over big flames!)…or try cooking over hot coals.

Flavor-fully seasoned, this meat is easy and juicy. Serve with Mexican Grilled Corn on the Cob, and/or Portobello Mushroom “Steaks”. If you don’t bring a grill camping…simply wrap pork in foil after seasoning and cook over hot coals in your camp fire
Ingredients
  • 1 lb well-trimmed pork tenderloin
  • 2 tsp light brown sugar
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/4 tsp garlic powder
  • 3/4 tsp salt
  • 1/4 tsp ground black pepper
Instructions
  1. Preheat Grill to medium-high…OR prepare charcoal grill, or hot coals in camp fire
  2. Combine all seasonings
  3. Rub seasoning mixture all over pork
  4. Grill, turning occasionally for 22-24 minutes (depending on thickness), or until thermometer inserted into the center of the pork reaches 155 degrees
  5. Transfer to cutting board and let rest 5-10 minutes
  6. Slice and serve

    Scrumptious! You can also try to marinade any kind of meat barbecue with some lemon soda overnight. Will work as a tenderizer if you want it medium rare, great food for camping!
