Grilled Corn on the Cob with a zesty mexican sauce
Ingredients
  • 4 Ears Corn
  • 1/4 cup Canola Oil Mayonaise
  • 1 tsp Fresh Lime Juice
  • 1 tsp Chili Powder
  • 4 tsp Grated Parmesan Cheese
Instructions
  1. Preheat Grill to medium-high…OR prepare hot coals in your camp fire pit
  2. Remove outermost husks, leaving tender light green husks
  3. Soak the ears in cold water for 15 minutes
  4. Combine mayo, lime juice, chili powder
  5. Grill the ears of corn for 20 minutes or longer, until a kernel pops easily when pressed with a fork
  6. Dry corn is overcooked corn
  7. Peel back husks and spread 1 tbsp of the dressing over each cob.
  8. Dust each with 1 tsp cheese
  9. Serve Hot!
