- 4 Ears Corn
- 1/4 cup Canola Oil Mayonaise
- 1 tsp Fresh Lime Juice
- 1 tsp Chili Powder
- 4 tsp Grated Parmesan Cheese
- Preheat Grill to medium-high…OR prepare hot coals in your camp fire pit
- Remove outermost husks, leaving tender light green husks
- Soak the ears in cold water for 15 minutes
- Combine mayo, lime juice, chili powder
- Grill the ears of corn for 20 minutes or longer, until a kernel pops easily when pressed with a fork
- Dry corn is overcooked corn
- Peel back husks and spread 1 tbsp of the dressing over each cob.
- Dust each with 1 tsp cheese
- Serve Hot!
